Key parameters — 4 raw material groups

FDCM publishes reference specification tables for all 24 dairy raw materials in the portfolio. Each product entry lists the critical process-relevant parameters: protein content (N×6.38 for dairy), moisture, fat, ash, pH where applicable, and key microbiological limits (TPC, coliforms, Salmonella, Listeria). These are minimum specification values — actual CoA per batch is provided with every order.

For procurement purposes, parameter data is available as TDS (Technical Data Sheet) per product on request. Allergen declarations (MILK, EGG), non-GMO statements, and Halal/Kosher certificates are issued per batch for eligible products. EU Regulation (EC) 853/2004 compliance is confirmed per shipment for all dairy-of-animal-origin products.

Protein content is the primary procurement parameter across the range — from SWP (≥11%) through WPC 35 (≥35%), WPC 80 (≥80%), up to MPI 90 and WPI 90 (≥90%). Fat content determines the application window: high-fat WPC 75/65 grades serve feed and compound food applications, while WPI and caseins cover low-fat, lean-label formulations.

Protein Concentrate & Bar Manufacturing

WPC 80 (regular or instant) is the core whey raw material in protein powder and bar production. Protein content ≥80% ds, fat typically 4–8%, lactose 3–5%. Instant grade (lecithin-coated) is used where dispersibility in cold water matters; regular grade suffices for extrusion, baking and tableting. WPI 90 is used in lean-label, low-carb and low-fat formulations where lactose ≤1% and fat ≤1% ds are required.

Cheese Analogue & Pizza Topping Production

Rennet casein (90 mesh) is the primary raw material for melt-and-stretch cheese analogues used in pizza toppings, processed cheese slices and cheese-flavour compounds. The Ca-phosphate complex in rennet casein is responsible for the characteristic melt and stretch behaviour that acid casein cannot deliver. MPC 80 is used in natural cheese production as a protein standardisation ingredient.

Sports Supplement & Functional Food Formulation

MPC 85 and MPI 90 are used in high-protein functional foods, RTD (ready-to-drink) protein beverages and protein-fortified dairy products where a mixed casein/whey protein profile is required. MPI 90 has lower lactose than MPC 85 and is preferred in lactose-sensitive formulations. For every dairy raw material, FDCM publishes reference specification values for: protein content (% on dry basis, N×6.38), moisture, fat, ash, pH (where applicable), and standard microbiological limits (TPC, coliforms, Salmonella, Listeria monocytogenes, Staphylococcus aureus). Actual CoA per production batch is included with every order. TDS (Technical Data Sheets) are available on request per product.
WPC 35 contains ≥35% protein on a dry basis with up to 4% fat and is used in bakery, processed food and compound chocolate where protein enrichment is needed at lower cost per kg protein. WPC 80 contains ≥80% protein ds and is the standard sports nutrition and high-protein food ingredient. WPC 80 Regular is used in industrial processing (extrusion, tableting, encapsulation); WPC 80 Instant (lecithin-coated, agglomerated) is used where dispersibility in cold water is required.
Acid casein (≥88% protein, pH ~4.5 during production, washed to neutrality) does not melt or stretch when heated. It is used in non-melting applications: processed cheese sauce, caseinate production, cosmetic and industrial casein uses. Rennet casein (≥88% protein) retains the calcium-phosphate complex of native micellar casein, which gives it melt-and-stretch functionality when heated in the presence of emulsifying salts. Rennet casein is the correct raw material for pizza topping cheese analogues and stretchy processed cheese.
Demineralisation percentage refers to the removal of minerals (predominantly potassium, sodium, calcium, phosphorus) from sweet whey by electrodialysis or ion exchange. DemWhey 40% has 40% of minerals removed — used in follow-on formula and growing-up milk where some mineral content is acceptable. DemWhey 90% has 90% of minerals removed — used in type 1 infant formula where the K/Na/mineral ratio must closely match breast milk. The protein content remains similar (~15% ds); the primary functional difference is the reduced mineral load and ash content.
Minimum order quantity is 15 kg for most products (one bag). Standard minimum is 25 kg (one bag) for commodity grades. Current MOQ per product is listed on FDCM.eu.
